Dining In – The Egg Muffin

My mornings have been forever changed thanks to these egg muffins.

 

Honestly.

 

So yummy, easy and very quick to make. What is better then a healthy breakfast waiting for you in your fridge. These egg muffins have been all over the internet lately and I didn’t really love any of the recipes I found so I just made my own. That’s the beauty with these. You can make them work with whatever protein and vegetable you have available.

 

Easy Egg Muffins

( makes 12 servings)

(Preheat oven to 350 degrees)

  • 10 whole eggs
  • 2 handfuls of spinach ( about 3 cups chopped)
  • 3 slices of turkey deli meat, chopped
  • 1 cup shredded low fat marble cheese
  • 2 tbsp italian seasoning
  • 2 tbsp of milk
  • salt and pepper ( about a tsp of each)

Mix eggs in a large bowl until incorporated. Add in chopped spinach, turkey, milk and cheese and mix well. Add seasoning and stir until incorporated. Spray non stick muffin pan with pam or olive oil and then fill each cup with the egg mixture. Be sure to leave some room at the top of the muffin tin as they will rise a bit. Cook in the oven until tops are brown, about 20 – 30 minutes.

The thing I love about these muffins is you could make them your own. They are so versatile. I can’t wait to try goat cheese and roasted red pepper, or sautéed mushrooms and onion.  I punched in all the ingredients into a calorie counter and these muffins came out to just over 100 calories and 8 grams of protein each. What a great way to start your day!

Sunday Morning Easy

I woke up this morning needing something good for my body. I haven’t eaten horrible this weekend but I could certainly tell my body need vitamins, and super fast. I don’t have an actual food journal as of yet, hopefully I will be heading to Chapters to buy a pretty one soon, so for now  I will post some of my meals online.

This smoothie was delicious. Packed full of vitamins, sneaky vegetables and some fresh fruit to round everything out.

  • 1/2 cup wild blueberris
  • 1/4 cup cranberries
  • 1/4 cup raspberries
  • 1/3 cup greek yogurt
  • 1/2 cup milk
  • 1tbsp chia seeds
  • 2 cups spinach ( one giant handful)
I just threw everything into my ninja and blended away. I love the ninja because its smaller and more convenient than a blender but it packs the same powerful punch. I honestly think it would blend anything, and hasn’t let me down yet.
While reaching into my spinach bag I noticed that it was almost time to throw it away even though I still had a little over half of it to go. I am making turkey soup for dinner tonight and planned to incorporate some spinach into my bowl, but other than that I really had no immediate use for the rest of it. Enter Google.
I saw images of frozen spinach “cubes”. I wilted my spinach down in my pan, it honestly took like 3 minutes, blended it up and had it in ice cube trays. Now to wait for it to fully freeze, put it in a container and just pop the cubes into my smoothies or pasta sauces whenever needed. Ingenious.

Now to run off to the grocery store, head out for a walk, and get some studying done. Hope everyone has a Happy Sunday!
