Cookies For You, Cookies For Me

Around the holidays everyone bakes their favourite treats and goodies. I always look forward to tasty chocolates, yummy cakes and superbly decorated cookies. I took part in The Great Food Blogger Cookie Swap this year, and I can’t tell you how exciting it is to receive a bunch of different cookies in the mail. It’s such a treat!

The cookies I decided to make this year where simple. As kids my Mom always made up a huge batch of  cute shaped sugar cookies, and we would anxiously wait at the table while she mixed up different coloured royal icing for us to decorate with. Whenever I think of holiday baking I think of sugar cookies. 

The recipe that we use is from Company’s Coming, circa 1987. This cookbook is older than me, and honestly it’s one of the best.  Everything is so simple and this recipe is no different. Anything with sugar, butter and icing has got to be great.

Sugar Cookies

  • 1 cup butter
  • 1.5 cup sugar
  • 2 whole eggs
  • 1tsp vanilla ( I used a little bit more)
  • 3 cups all purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt

Cream butter and sugar until well blended. Beat in your eggs one at a time, then add vanilla and mix until incorporated.

Mix in flour, baking powder and salt. Once mixed cover dough in plastic wrap and chill, 30 minutes – 1 hour (The cookbook doesn’t say to do this, but honestly your dough will be way to soft and the shapes won’t make it through baking). Once chilled roll dough out until it is about the thickness of pie crust, cut into desired shapes and bake at 350 degrees for 8 to 10 minutes.

For the icing, I just used a typical Royal Icing recipe.

Royal Icing

  • 4 cups icing sugar
  • 3 tbsp meringue powder
  • .5 tsp vanilla extract
  • 1/2 cup warm water

Beat the icing sugar and meringue powder until combined, and vanilla and water until you have reached your desired consistency. The icing should be used immediately or covered in an air tight container, as it does dry out quite quickly.

“Green” Monster Popsicles

My world has been rocked. The idea of turning my favorite smoothie into a Popsicle isn’t a highly radical idea, but I just can’t believe I never thought of it before. My favorite tasty summer treat just became a whole lot healthier!

I blend 3/4 frozen blueberries, 1 medium banana, 5 oz yogurt ( I use plain Greek), 3 cups of fresh washed spinach and one tbsp lemon juice. Blend until smooth and there are no chunks of fruit or spinach. Fill your Popsicle molds and freeze for a couple of hours, then enjoy!

Dining In; The Best Damn Cookie You’ve Ever Had

Some days you just need a treat.  It’s been a long week, your co-workers drive you crazy and family members make you want to scream.  Sometimes life is smoothing along great and you just feel like something sweet.  Luckily I have great co-workers and a family that is semi sane. After a week of eating fresh wholesome foods you want to get a little bit dirty.  I love kneading, mixing and pounding out ingredients.  These cookies are quite the challenge.

They have a big soft interior with a sinfully delicious chocolate aroma.  I will surely marry my man because I made these cookies.  These cookies are practically begging to be paired up with vanilla soft serve and a huge glass of cold milk.  For chocolate lovers only!

 

Giant Double Chocolate Chip Cookies

aka; “snag a husband” cookie

 

Ingredients:

1 cup (2 sticks) cold, unsalted butter, cubed

1¼ cup sugar

2 large eggs

½ cup dark cocoa powder

2¼ cups all-purpose flour

¼ tsp. coarse salt

1 tsp. baking powder

2½ cups semi-sweet chocolate chips

 

Directions:

Preheat the oven to 350˚ F.  Line baking sheets with parchment paper or silicone baking mats.  In the bowl of an electric mixer, combine the butter and sugar.  Beat together on medium-high speed until light and fluffy, 2-3 minutes.  Blend in the eggs one at a time, scraping down the bowl as needed.  Mix in the cocoa powder until well blended.  Add the flour, salt and baking powder to the bowl and mix on low speed just until incorporated.  Fold in the chocolate chips with a spatula.  Transfer the dough to a work surface and knead briefly by hand to be sure the ingredients are well combined.

Divide the dough into 4 ounce portions (or divide into 12 equal pieces).  Roll each portion of dough into a ball and flatten just slightly into a disc.  Place on the prepared baking sheets, a few inches apart.  Bake 16-20 minutes.  Let cool on the baking sheets 5-10 minutes, then transfer to a wire rack to cool completely.
